Indonesia is a country with thousands of islands. Its coffee is similarly complex. As you brew a cup, Sumatra Lintong gives out a deep sweet aroma. At your first sip, you’ll notice the syrupy structure and savory-sweet notes akin to a very subtle orange and black tea. Because the acidity is medium, this cup is still easy to drink.
Every Cup of Coffee has a Story
Lintong is southwest of Lake Toba, high on a plateau with notable flora and fauna diversity. This volcanic region is known for its fertile soil, a result of a super-volcano eruption a million years ago. The soil is so rich that the locals say you can put a chair in the ground and it will grow into a table!
The Sihombings and Sianturis are third generation farmers. Their estates contain more than 10 different varietals of coffee. Our Lintong is a very special coffee as everything from farming to drying is done by hand.
At sunrise, farmers start picking the ripe cherries before pulping them with manual pulpers. After storing the wet parchment in bags to ferment overnight, the parchment is spread out on patios to dry. When the parchment is dry enough, it takes on a deep blue-green color and is ready for hulling. Another two or three days are needed for further drying before the coffee is triple handpicked and packed.
