However, what truly stands out is how incredibly smooth and easy to drink this coffee is as it has lower acidity. This remarkable attribute is due to the semi-washed process.

Every Cup of Coffee Has a Story

in Espírito Santo, the coffee cherries mature at their own pace, and handpicking is the only way to ensure that the ripest fruit is collected. Unlike many other states in Brazil, this method of farming relies heavily on manual labor.

The region's mistier, more humid climate, and higher altitude distinguish it from other coffee-producing areas in Brazil. Consequently, farmers have adopted the semi-washed method. This method involves fewer steps than the traditional washed process. In the semi-washed method, the outer skin of the coffee cherries is mechanically removed, and the beans, with their mucilage still attached, are stored. The mucilage is then washed off with water before the beans are dried. This process tends to reduce the acidity of the final coffee, resulting in a smoother taste.
