Every Cup Has A Story

Sequential co-fermented processing is an innovative fermentation method that combines traditional techniques with experimental additions. Edwin Noreña incorporates fresh passion fruit and coffee mossto into a carefully controlled dual-fermentation process, creating distinct and explosive flavor profiles in the coffee beans.

At Finca Campo Hermoso, Edwin Noreña has revolutionized coffee processing through intensive research and development. Starting with premium cherries harvested above 24° brix, the coffee undergoes an initial anoxic fermentation for 12 hours with fresh passion fruit and coffee mossto. After depulping with 50% mucilage intact, a second 12-hour fermentation follows before the beans are dried for 26 days as a honey process.
