Triple-fermented watermelon mossto co-fermentation is an innovative processing method that combines traditional honey techniques with experimental fruit additions. Edwin Noreña incorporates fresh watermelon and coffee mossto (cherry juice) into a carefully controlled multi-stage fermentation process, creating explosive and candy-like flavor profiles in the coffee beans.

The watermelon honey process involves three distinct fermentations: first, purely fresh whole coffee cherries undergo carbonic maceration; second, a classic fermentation of depulped parchment with 50% mucilage intact; and finally, the parchment is submerged in a carefully formulated solution of coffee cherry mossto infused with fresh and dehydrated watermelon. The coffee is then dried for 10 days in Edwin's solar dryer.
