Anaerobic coffee processing is a unique fermentation method that deprives coffee beans and microbes of oxygen. As carbon dioxide accumulates in the tanks, pressure increases and acids like lactic acid develop, creating distinct flavor profiles in the coffee beans.

At Finca La Secreta, Juan Carlos Mejia has innovated further with the anaerobic process. He incorporated lychee fruit, natural fruit concentrates, and specific yeasts and microbes into the process. The result is a lyrical, fruit-forward cup bursting with notes of lychee, guava, muscat grape, and peach.

Finca La Secreta’s success is a testament to the dedication of Juan Carlos Mejia and his family. They meticulously care for over 130,000 coffee trees across their 30-hectare farm, five hectares of which are a natural reserve that protects various animals, plants, and vital wood and water resources.

Besides coffee, Finca La Secreta also cultivates plantain, cassava, and beans. The fertile land and high altitudes, reaching up to 2,050 meters above sea level, provide ideal conditions for producing high-quality coffee.
